- 1 can corn (drained and rinsed)
- 1 can black beans (drained and rinsed
- 1 can diced tomatoes with green chilies (drain off a little juice)
- 1 avocado cut into pieces
- a few stalks of cilantro coarsely chopped
- salt & pepper to taste
The cilantro really made this a very refreshing salsa and I was pleased to see that my avocados have stayed nice and green even though I made this dish a few nights ago, which is probably caused by the acidity in the tomatoes.
